Ethylcarbamate
Ethylcarbamate is a compound produced naturally in food and fermented drinks, mostly in alcoholic drinks.
Ethylcarbamate is formed by a reaction of ethanol and certain precursors of fruit due to the influence of light during distillation.
EFSA issued a scientific opinion on the presence of hydrocyanic acid and ethylcarbamate in food and drink in September 2007.
